Coffees and Teas

All of our coffees are brewed from
freshly roasted Arabica beans, specially selected for us from the best coffee
growing regions around the world. Arabica beans grow at higher elevations, often
have to be hand-picked and have lower yields than the common ÒRobustoÓ beans,
which comprise the majority of commercial coffees; Arabicas have more complex
flavors and are significantly lower in caffeine than are Robustos. Freshness: Coffee flavors peak about
twenty-four hours after roasting, then slowly decline as released ÒflavorÓ
oils oxidize. Depending upon origin and degree of roast, the decline is
noticeable after about 7 days and evident after about 10 days. We sell
roasted coffee by the quarter, half and full pound and recommend that our
customers only buy enough to last until they come back. Once ground, flavor
changes rapidly. We strongly advise customers to get a grinder and grind just
before brewing. Roasts: Roasting releases the complex
flavors locked in green beans. Each coffee will have its own Òsweet spotÓ.
Lighter roasts (American) bring out the brighter ÒoriginÓ flavors while
darker roasts (City and full city) bring out the richer, darker coffee
flavors. Over-roasting (French) destroys many of the flavor components but
does result in longer shelf life. This explains the practice of some popular
chains, which ÒcharÓ the beans, destroying any origin flavor. Some of our
coffees are roasted to both American and full city. They can then be brewed
separately to highlight distinct properties, or mixed as a Òsalt and pepperÓ
blend of the same bean, to obtain the full range of flavors. Green Beans for home roasters are
available at ½ of the roasted price.

We brew in an old-fashioned coffee urn with a cloth filter, which does not strip the flavor from quality coffee, as does the standard filter-drip method. |

South American Blend: Our daily Coffee – A balanced blend of
freshly roasted Central and South American coffees (Colombian, Costa Rican,
Brazilian, etc.) Daily Special: Origin coffees or our own blends. Cajun Kickstart: Our South American blend with a little chicory.
Formerly our daily blend but now made only by request. Traditionally served

Modern espresso machines were created in Italy during the 1940Õs in an attempt to extract and concentrate more of the flavors and oils from coffee. By forcing hot water through packed, finely ground coffee, flavorful oils are emulsified resulting in more aroma and body and a velvety feel when sipped. Since espresso is essentially a coffee concentrate, it blends well with steamed milk, water, chocolate and flavored syrups to produce a variety of specialty drinks, which the Italians also got to name. |

Espresso: A double shot (a single is a waste of time – We
are not about to clean the
machine for one shot). Approximately two ounces of espresso served in
a
small, heated demitasse. May be accompanied by a sliver of lemon zest or
a piece of chocolate. Americano: Espresso in a cup with hot water. Similar in strength
to brewed coffee Espresso Macchiato: An espresso ÒmarkedÓ with frothed milk. In Italian,
"macchiato"
can be translated as "marked," "stained," or
"spotted". Less
foam than the dry cappuccino. Espresso Freddo: Espresso, usually sweetened, shaken with ice and
strained into a
small glass tumbler. No milk. Cappuccino: Espresso with foamed milk. Normally 1/3 espresso, 1/3
steamed milk
and 1/3 foam served in a 6 ounce cappuccino cup. Dry Cappuccino: Espresso with foamed milk
ladled on top
more foam than the espresso macchiato. Why Bother: Decaf espresso and non-fat milk.
12-ounce cup. May add chocolate (Mocha)
or syrups Grande: Latte served in a 16 ounce cup
with more steamed milk.
Venti:
